Lemon coriander vegetable soup

 







Ingredients

Juice of one big lemon

Coriander leaves chopped, a small cup

4 cups of water

Salt and pepper to taste

2 tbs cooking oil

A cup of mixed vegetables ( corn, carrot, cabbage, beans, pumpkin etc, all shredded)

A small onion finely chopped

A table spoon of finely chopped ginger and garlic

2 green chillies finely chopped

Stem and leaves of parsley, a cup

Few table spoon of finely chopped spring onion

A table spoon of cornflour mixed with 1/4 cup of water

Method

In a pan, heat oil, add onion, ginger, garlic and chillies and saute for few minutes.

Add chopped parsley stem and leaves.

Also add vegetables, salt and pepper and fry for a couple of minutes.

Add spring onion.

Then add water and bring it to a boil.

Add the cornflour mix and again boil for few minutes.

Add coriander leaves and turn off the stove.

Add lemon juice and stir.

Serve hot.
