All Spice Chicken















Ingredients

Chicken - 1 kg (i used leg pieces)
onion- 1 kg
Tomato- 1 kg
ginger- 3 tbsp. grated
garlic- 1 pod, finely chopped
green chilies- 4 nos. finely chopped
coriander powder - 1 tbsp.
chilly powder - 1 tbsp.
turmeric powder- 1 tsp.
roasted cumin powder- 1 tsp.
salt- to taste
oil -1/2 cup
spice powder -2 tbsp. (4 cloves, 1" cinnamon, 4 green cardamom, a piece of nutmeg,a tbsp. fennel seeds, 1 tbsp. pepper corn, 3 star anise, a piece of mace, 1 black cardamom.) dry roast all these spices and grind it into powder.
few sprigs of curry leaves and 2 bay leaves for tempering.
1 tbsp. chopped coriander leaves for garnishing.

Method
 In a kadai, heat oil and add curry leaves and bay leaves.
After few seconds, add onion and fry for 4-5 minutes, or till its golden brown.
Add ginger, garlic and green chilies and fry for 2-3 minutes.
Now add tomatoes and salt and mix well. cover the kadai with a lid and cook on medium - low flame, till the tomatoes are done and the oil separates.
To this mix, add the dry spices one by one, keep the flame in low and mix the spices continuously.
continue cooking till the oil separates.
Add chicken pieces, mix well and cover the pan with a lid.  Stir the chicken in between. Cook for 10-15 minutes or till its done, on medium flame.
Garnish with coriander leaves.
Serve hot with rice or Indian breads.
