Black Rice Pudding









Ingredients


















1 cup organic black rice (available on line and all leading super markets)
 
 1/2 cup palm sugar/jaggery 

1/2 cup thick coconut milk

1 tbsp ghee

1 tbsp each of cashew nuts and raisins

1 tsp cardamom powder

Method




soak black rice for 3 hrs.
Drain the water, wash the rice and pressure cook in 2 cups  water.
After the first whistle, reduce the flame and cook the rice for 15 minutes.
Mash the cooked rice with the back of a ladle.
Add 1/2 cup of water to the cooked and mashed rice.
Turn on the stove, add palm sugar, stir continuously , till the sugar dissolves.
Add coconut milk and again stir.
Check for desired consistency, and turn off the stove when the coconut milk starts boiling.
In another pan, heat ghee, fry cashew nuts and raisins and pour it over the prepared rice pudding.
Add the cardamom powder too and mix well.
Serve hot.
