SWISS ROLLS

INGREDIENTS

1/2  cup plain flour              
1/2 cup sugar
3 large eggs
100 gm mixed fruit jam
1 tbs. oil
1 tsp. vanilla essence

Method

Separate the egg white and yolk. beat the egg yolks along with sugar, oil and vanilla extract till the mix doubles in quantity and the color turns pale.
Beat the egg whites in another bowl, till it is soft and fluffy.
Fold the egg whites to the yolk mix.
Add flour to this mix and fold. combine well.
Grease a baking sheet/ tray and line it with butter paper.
Pre heat the oven at 180 degree.
Pour the mix to the prepared tray and bake for 15 min.
Take out the baking sheet/ tray from the oven.
 Mean while place a clean kitchen towel on another baking sheet and sprinkle it with powdered sugar.
Turn over/ flip the cake on to the kitchen towel and peel off the butter paper/ parchment paper and sprinkle some more powdered sugar on to the cake and roll the cake tightly, along with the kitchen towel.
Place the cake in the refrigerator for an hour. Take it out and unroll the cake.
Spread jam all over the cake and again roll it tightly(remove the kitchen towel) and wrap it in a plastic wrap and chill for an hour or two.
Remove the wrap and cut the cake in circles and serve.

Note
when you roll the cake, roll it away from you (roll it towards the opposite direction).
you can use any flavored jam or whipped cream for filling.
