Grilled vegetable sandwich





 Ingredients

Few bread slices

1 cup shredded mozzarella cheese

1 cup mashed potatoes

Few sticks of butter

1 large onion finely chopped

1 tsp finely chopped garlic

1 tsp finely chopped ginger

2 large tomatoes finely chopped

2 green chillies finely chopped

1 tsp chilli flakes

1 tsp pizza seasoning

1 tsp soy sauce

1 tsp black bean sauce (optional)

Salt to taste

1/4 cup chopped parsley leaves

1 cup of mixed vegetables ( frozen corn, frozen peas, finely chopped carrots, beans and cabbage)

3 tsp oil for cooking

Method


Boil and mash the potatoes and keep it aside.

In a pan heat oil, add onion, ginger, garlic and chillies and fry for few minutes.

Then add chopped tomatoes and cook till tomatoes are done.

Add chopped parsley leaves.

Add salt, pizza seasoning and chilli flakes and give a stir.

Add soy sauce and black bean sauce and fry for few more seconds.

Add vegetables, and cook till the mix is completely dry.

Place bread slice on a preheated grill.

Place some mashed potatoes and shredded cheese. 

Then place the cooked veggies and sandwich it with another bread slice.

Place a small piece of butter on top.

Grill it till it's done.

Serve hot.
