2 cups thick poha/aval/flattened rice
2 ripe tomatoes finely chopped
2 green chillies finely chopped
1 cup onions, finely chopped
1/2 cup peanuts
1 large potato, peeled and cubed
Juice of 1 lemon
1 tsp mustard seeds
1 tsp sugar
Salt to taste
1 tsp turmeric powder
3 tbs oil
Coriander leaves for garnishing
Namkeen/ Sev/Farsaan for serving and garnishing (optional)
Method
In a pan, dry roast peanuts and keep aside.
In a bowl, soak poha in enough water for 1/2 hr.
In a kadai, heat oil, add mustard and let it splutter.
Add onion and chillies and saute, for aminute.
Add cubed potatoes, cover and cook till potatoes are done.
Add tomatoes, turmeric and salt. Cover and cook till tomatoes are mushy.
Add sugar and coriander leaves and mix well.
Add lemon juice, soaked and drained poha and peanuts and mix well.
Turn off the stove and add sev, if using,mix well and serve hot.
