Paneer biriyani in pressure cooker



 Ingredients

For dry roasting

1 tsp aniseed/ saunf

1 tsp shahi jeera

2 cardamom /elachi

1 star anise

1" cinnamon stick

1 tsp pepper

2 cloves

Other Ingredients

1 large onion.finely chopped

1 tbs of chilli, garlic and ginger paste (combine all 3 and grind)

1 tbs of cashew and raisins

3 tbs of ghee

1 large tomato, finely chopped

salt as per taste

1 tsp chilli powder

1/2 tsp turmeric powder

1 tsp coriander powder

1 tsp garam masala powder

1/4 cup curd

1 cup mixed vegetables ( capsicum, beans, cauliflower and green peas)

1 cup cubed paneer

2 cups soaked and drained rice

4 cups water

Method

Dry roast all the spices together and crush it with a mortar and pestle and keep aside.

In a pressure cooker,pour ghee, heat it and add crushed spices.

Then add cashew and raisins and stir for few seconds.

Add onions , chilli ginger and garlic paste and cook for a couple of minutes on medium flame.

Add chopped tomatoes and cook till the tomatoes are mushy.

Add salt, chilli  powder, turmeric and coriander powder and mix well.

Add curd and combine well.

Add the vegetables, paneer and garam masala and after mixing it, add rice and water.

Close the lid of the pressure cooker and cook till the first pressure comes.

Turn off the stove after first pressure and wait till the pressure completely released.

Serve hot.
