Vegetable Upma







Ingredients



2 cups Fried Semolina/Sooji/rava 
1 cup finely chopped mixed vegetables (a mix of carrot, capsicum, beans and also a little frozen peas and corn)
2 tomatoes chopped
1/2 cup desiccated coconut
1 tsp chopped ginger
2 slit green chillies
few curry leaves
1/4 tsp turmeric powder
1 tsp vangi bath masala, 
1 tsp mustard seeds
1/2 tsp urad dal/black gram                                  
1 tsp roasted bengal gram
2 dried red chillies
few cashew nuts
2 tsp ghee
4 tbs coconut oil
salt to taste
4 cups of water




Method
Heat oil in a pan. Add ghee and allow it to melt.
Add mustard seeds and allow it to splutter.
Then add urad dal, red chillies, bengal gram and cashew nuts, and fry for few seconds.
Add ginger, green chilli and curry leaves and fry for few seconds.
Add tomatoes and cook till it becomes soft and mushy.
Add salt and turmeric and saute for a minute.
Add Vangi bath masala and give a good stir and also add vegetables.
Cover and cook the vegetables for 3 minutes on low flame.
Open the lid and pour water and let it boil.
Add desiccated coconut and mix well, reduce flame and add roasted sooji slowly,stirring continuously,
 without any lumps.
cover and cook on low flame for a couple of minutes.
serve hot
