Tomato Rice


Ingredients

 2 cups rice, washed and drained
1 cup tomato puree
1 cup coconut milk
3 cup water
salt to taste
1 tsp chilly powder
1 tsp coriander powder
1 tsp garam masala powder
1/2 tsp turmeric powder
1 tbs cashew nuts
1 tbs ghee
4 tbs oil
1 tsp jeera/ cumin
2 cloves
1" cinnamon stick
1/2 cup finely chopped onion
2 tbs finely chopped ginger and garlic
1 tsp finely chopped green chillies
coriander leaves for garnish


Method

In a pressure cooker,pour oil and ghee and once its heated up, add cumin.
Add cloves , cinnamon and cashew.
Add onion, ginger, garlic and chillies and fry till it turns golden brown.
Add tomato puree and fry till oil separates.
Add salt.
Add chilli powder, coriander powder, turmeric and garam masala and stir fry for 2 minutes.
Pour coconut milk, and half of chopped coriander leaves and bring it to boil.
Add rice and mix well.
Add water and close the lid of the pressure cooker.
Turn off the stove after first whistle.
Garnish with coriander leaves before serving.
