Healthy Vegetable Soup

 




Ingredients

1 cup amaranth leaves (cheera/ rajgira/cholai leaves)
1 tbs ginger
1 cup mix of peas, corn and paneer (cottage cheese)
1/2  cup thick coconut milk
1 tsp lemon juice
Salt and pepper to taste
1 tsp garam masala
2 tsp ghee
1 tsp cumin/jeera
Fried bread pieces for garnish (optional)
4 cups water




Method

In a pan boil water along with ginger.
Add amaranth leaves to boiling water and stir for 2 minutes and turn off the stove.
Strain and reserve the water into a bowl.
Grind the amaranth leaves along with the ginger, to a smooth paste.
Pour this paste to the reserved water in which you boiled the ginger and amaranth.
In a pan, heat ghee and add cumin and let it splutter.
Add the mix of corn, peas and paneer and stir fry for 2 minutes.
Add the amaranth paste to it.
Add pepper,salt and garam masala.
cover and cook on medium flame for 10 minutes.
Add lemon juice and stir.
Then slowly add the coconut milk, stir continuously.
Once it starts boiling, turn off the stove.
Garnish with fried bread pieces and serve hot.
