Easy Tea Cake Recipe



Ingredients

2 cups maida / refined flour
1 tsp baking powder
200 gm unsalted softened butter
6 eggs
1 cup powdered sugar
2 tsp vanilla essence




Method

Sift together, maida and baking powder.
In a mixing bowl,add powdered sugar and butter, and beat till smooth and creamy. (for about 7 minutes, if using a electric mixer, on high speed)
To this, add eggs, one by one ( if using electric mixer, reduce the speed to minimum while adding eggs.Add one egg at a time, blend each egg well before adding the next one. After adding all six eggs, increase the speed of the mixer to maximum speed)
Mix in the vanilla essence and continue whipping the mix.
Beat eggs till it becomes creamy and frothy and also the quantity doubles. (it takes almost 10 minutes of whipping, if using electric mixer, in maximum speed.)

Reduce the speed of mixer to the minimum, and add sifted flour in small batch and make sure the flour is well incorporated in the egg mix .
Pour the prepared cake batter in two greased loaf pan and bake for 20 minutes in a preheated oven at 
180 C.
