Pottuvellari (Blonde Cucumber) Smoothie

Ingredients (4 servings)








1 medium sized pottuvellari (blonde cucumber)
1 cup fresh coconut extract (coconut milk)
3 cup chilled milk
1/4 cup sugar


Method
Place coconut pieces in a blender, add 1 cup of water and blend well. Strain the coconut milk into a bowl and keep aside.
cut the pottuvellari/ blonde cucumber, remove its seeds and peel off its skin.
Either blend the fruit in a mixer along with sugar or mash the fruit well with a spoon or ladle.
Add Coconut milk and chilled milk to the fruit pulp and again blend well.
Pour it into a glass and serve chilled.
