Corn And Spinach Tub

Ingredients

For the tub
1 cup plain flour
1 tsp. dry yeast
1 tsp. sugar
A pinch of salt
2 tbsp. olive oil
Hot water to knead the dough, about  1/2 cup

For the filling
1/4 cup frozen sweet corn kernels
1/2 cup spinach leaves, finely chopped
1 large onion, sliced
2 large tomatoes, finely chopped
1 green pepper, finely sliced (capsicum)
2 tbsp. garlic and ginger, finely chopped
1 tsp. paprika (chilli powder or chilli flakes can be used)
1/2 cup grated cheese
2 tbsp. olive oil
salt to taste.

Method
Combine sugar, salt and yeast in hot water and stir well till the mix is dissolved completely.
Add olive oil to the flour and mix well using your fingers.
Knead the flour using the yeast, sugar mix and cover it with a moist clean cloth and keep aside for an hour for rising.

Meanwhile make the filling.
Heat oil in a pan. Add onion, ginger and garlic and paprika and fry for a couple of minutes.
Add salt and tomatoes, and cook till the tomatoes are done.
Add spinach,pepper and corn and cook on high flame, stirring continuously, till the veggies are crisp and dry.

After an hour, take out the flour mix and make small balls out of it.
Roll out each ball into thin circle. Spread 1 tbsp. of filling in center each circle and carefully fold the circle from sides, like a tub.
Top it with some grated cheese.
Pre heat the oven at 200 degrees.
Line a greased baking tray with butter paper/  parchment paper and place each tub carefully and bake for 20-25 mins. or till the tub turns light brown in color.
Serve hot with Tahini.
