Fish Pie In Herbs



Ingredients

A cup of mixed vegetables ( carrot, capsicum, onion, cauliflower, celery) - cut into small cubes

500 gms basa fish fillet
1 cup heavy cream + 2 tbsp. for mashed potatoes
1 pod garlic finely chopped
a pinch of saffron soaked in a tbsp. of warm milk
1 cup grated cheese
1 tsp. pepper powder + 1 tsp. for mashed potatoes
1 tsp. lemon
1 cup spinach leaves
2 potatoes, medium sized
1 tsp. curry powder
salt to taste
 2 tbsp. chopped coriander leaves
1 tbsp. mixed herbs (rose mary, thyme, oregano and parsley)
3tbsp. oil
1 tbsp. butter
50 ml. milk

Method
Heat oil and add the chopped vegetables, along with garlic and salt.
Add saffron and curry powder and saute.
Add cream and bring the mixture to a boil. To this add grated cheese and combine well.
Add pepper and lemon juice and turn off the stove. This is the pie sauce.
Boil potatoes and steam cook the spinach leaves.
Chop the spinach leaves.
Mash the boiled potatoes. heat butter in a pan, put mashed potatoes, add milk and cream and pepper. Mix well and turn off the stove.
In an oven safe dish, place cubed fish fillets. top it with chopped spinach and pour the prepared sauce.
Season the sauce with mixed herbs and coriander leaves and cover the pie with prepared mash potatoes.
Bake the pie in a pre heated oven for 30 minutes at 220 C.
