MUSHROOM AND COTTAGE CHEESE DEVILS

This is our “innovative’ recipe with spicy and tangy gravy, which goes well with Chinese rice recipes or Indian bread. I have used oyster sauce in the recipe. There is a vegetarian oyster sauce also available in market, in which they use mushrooms.
Del monte’s red chilli garlic vinegar, American Garden’s apple cider vinegar and Bachun oyster sauce, (both veg and non-veg) is available in super markets. (like Big Bazar, Reliance Fresh etc.)
Ingredients
200 gm. Button mushroom, halved
200 gm. Cottage cheese/paneer, cubed
1 medium capsicum, cubed
1 tbsp. soy sauce
1 tbsp. oyster sauce (you can also use veg oyster sauce, also known as mushroom sauce)
3 tbsp. finely chopped garlic
1 tbsp. finely chopped ginger
3 green chillies, chopped lengthwise
2 medium onions, chopped finely
1 tsp. chilli garlic vinegar.
1 tsp. apple cider vinegar
1 tsp. pepper
1 tsp. red chilli powder
1 tsp. garam masala
Salt to taste
2 tbsp. oil
Spring onion and coriander leaves for garnishing


Method
Heat oil in a wok. Add garlic,ginger, chillies and onion and fry for 2-3 minutes.
Add capsicum and mushrooms and fry for a couple of minutes.
Add the spice powder, the vinegar, sauces and salt and stir fry on high heat for about 5 minutes.
Add paneer cubes and fry till it gets combined with mushroom and capsicum.
Garnish with spring onion and coriander.
Serve hot.
