Kerala Prawn Masala

Ingredients
250 gm. Medium prawns (I used sumeru frozen prawns, so don’t have to waste time on cleaning)
1 large onion, finely chopped
3 tomatoes, finely chopped
2 slit green chillies
2 tbsp. garlic and ginger, minced
1 tbsp. chilli powder

1 tbsp. coriander powder
1 tbsp. garam masala powder
½ tsp. turmeric powder
Salt to taste
1 cup thick coconut milk
3 tbsp. coconut oil
Few curry leaves
Coriander leaves, for garnishing
Method
Heat oil in a pan, add garlic and ginger and fry for a minute. Then add onions and curry leaves and fry till it is golden brown in colour.
Add tomatoes and cook till the oil separates.
Add salt and all dry spices and mix well. Add 2-3 tbsp. water and when it boils, add the prawns.
Cover and cook on medium flame for about 6-7 minutes.
Pour the coconut milk, give it a boil and turn off the stove. (The coconut milk might split, if you cook it for too long).
Garnish with coriander leaves and serve hot.
