Mushroom Quiche Lorraine

Ingredients
1 pie crust
200 gm. Button mushroom, chopped finely

100 gm. Fresh cream
2 eggs
1 tbsp. mixed herbs (thyme, oregano and rosemary) you can also use pizza seasoning
Salt and pepper to taste
1 cup grated cheese (I used Amul cheese)
1 tomato, finely chopped, for garnishing.
1 tbsp. olive oil
Method
Heat oil in a pan and fry mushrooms till its tender and all water dries up.
In a bowl, beat eggs till it doubles in quantity.
Add cream and cheese and beat for 2 minutes. Add salt and pepper and mixed herbs and stir well.
Add cooked mushrooms in the egg cream mix and stir well.
Place the pie crust in the tart case or a spring form pan and pour the prepared mix into it.
Garnish with sliced tomatoes.
Bake for 30 minutes (or till a tooth pick inserted comes out clean) at 220 C in a pre-heated oven.



 Note

Instead of mushrooms, you can use bacon, chicken, sausage, salami or cottage cheese.
