HOME MADE CREAM CHEESE

Many a times you come across the ingredient, CREAM CHEESE in various cake, pudding and dessert recipes. Cream Cheese is available in Indian markets, under the brand name Britannia. (I saw Britannia cream cheese in Big Bazar). But it's a bit expensive and for frequent and generous usage, you really have to spend a good amount of money. So I thought of experimenting it by my own and Google searched for the same and finally penned down an easy recipe.

Ingredients

1 litre full fat milk.
3 tbs synthetic vinegar
4 tbs fresh thick curd

Method

Keep the milk for boiling. When it reaches the boiling point, add vinegar. The milk curdles.( this procedure is same as that of making paneer/ cottage cheese at home.)
Sieve the curdled milk through a strainer.
Transfer this to a mixer and add curd.
Grind this to a smooth paste.
Transfer this paste to a muslin cloth and make a bundle and hang this, so that the liquid is drained.
You have to hang this for at least 8-10 hours, depending on the water content.
Wrap the cream cheese on to cling foil and chill overnight before using this on your recipes.
