4 large tomatoes
1/2 red capsicum
salt and pepper to taste
2-3 garlic
1 tbsp. cheese

Method
combine all the ingredients and blend it in a mixer.

Tomato Rice

Ingredients 2 cups rice, washed and drained 1 cup tomato puree 1 cup coconut milk 3 cup water salt to taste 1 tsp chilly powder 1 tsp coriander powder 1 tsp garam masala powder 1/2 tsp turmeric powder 1 tbs cashew nuts 1 tbs ghee 4 tbs oil 1 tsp jeera/ cumin 2 cloves 1" cinnamon stick 1/2 cup finely chopped onion 2 tbs finely chopped ginger and garlic 1 tsp finely chopped green chillies coriander leaves for garnish Method In a pressure cooker,pour oil and ghee and once its heated up, add cumin. Add cloves , cinnamon and cashew. Add onion, ginger, garlic and chillies and fry till it turns golden brown. Add tomato puree and fry till oil separates. Add salt. Add chilli powder, coriander powder, turmeric and garam masala and stir fry for 2 minutes. Pour coconut milk, and half of chopped coriander leaves and bring it to boil. Add rice and mix well. Add water and close the lid of the pressure cooker. Turn off the stove after first whistle. Garnish with coriander leaves before serving.

Eggless French Toast Rolls

Ingredients Few slices of bread, crust removed 1 tbs corn flour 1 cup milk 2 tbs sugar 2 tbs melted butter 1 tsp vanilla essence 1/2 cup chocolate sauce (click for recipe) Method After removing the crust, roll out each bread into thin sheets using a rolling pin. In a bowl, add corn flour, sugar, milk and vanilla essence and mix well without any lumps. Heat a pan, add butter, and place rolled out bread on it. Pour 2 tbs of corn flour milk mix on the bread and slowly flip the bread to the other side. Pour the milk corn flour mix to this side too. cook both sides on medium to low flame. Now spread a tsp of chocolate sauce on to the cooked bread and slowly roll this.

Instant karolappam/unniyappam

Ingredients 2 cups rice flour 1 cup water 400 gms palm jaggery 1 tsp black sesame seeds 1/2 cup grated coconut 1/4 tsp cardomom powder 1/2 cup mashed bananas Coconut oil for frying Ghee for frying Method In a saucepan, add water and jaggery and stir continuously till the jaggery melts. In a bowl add rice flour, sesame seeds, grated coconut, mashed bananas and cardomom powder and mix well. To this add the melted jaggery water (in room temperature) and combine well without any lumps. Heat the appam pan and pour in coconut oil and ghee mix in each mould. Pour a small ladle of batter in each mould and cook on medium flame till it turns golden brown in colour. It can be served as a snack as well as a dessert.
